Vegetable Frittata (Serves 4)
3 tbsp olive oil
1 chopped onion
1 large red pepper (cut in strips)
½ cup carrot (cut into small cubes)
2 medium-sized potatoes (peeled and cut into cubes)
½ cup broccoli (cut into small pieces)
½ cup cauliflower (cut into small pieces)
½ cup milk pepper
½ cup grated cheddar cheese
1. Saute all vegetables in olive oil for five minutes and add eggs, cheese and pepper.
2. Pour the batter into four baking moulds and bake for 40-50 minutes at 160ºC.
